RECIPE / GUILT FREE BLUEBERRY MUFFINS




Time for a new recipe! (check out my first one here) And what better day to make these guilt free blueberry muffins?

What you’ll need:

1. 400 gr spelt flour
2. 200 gr coconut blossom sugar
3. 1 tsp organic baking powder
4. the inside of 1 vanilla-pod
5. 2 eggs
6. 250 ml soy milk
7. 80 ml coconut oil (melted)
8. blueberries
9. muffin cups

Preheat your oven to 200 degrees C (400 degrees F) . Combine flour, cococonut blossom sugar, baking powder and the inside of the vanilla pod and mix well. Add the 2 eggs, soy milk and the melted coconut oil to the dry ingredients and blend until it’s smooth. Add the blueberries and stir carefully. Fill the muffin cups and bake for 20-25 minutes or until toothpick inserted in center comes out clean. ENJOY! And let me know how they tasted :)
